Dr. Oyeyink aattended Adedoja Memorial Primary School, Solamade, Ikorodu Lagos State and Ikorodu High School, Ikorodu, Lagos State for his secondary education. He later proceeded to Lagos State Polytechnic, Ikorodu for a National Diploma in Food Technology and graduated with Upper Credit in 2003. Dr. Oyeyinka completed his Bachelor of Technology (B.Tech.)Degree programme in Food Science at LadokeAkintola University of Technology, Ogbomoso, Nigeria in 2008, with First Class Honours.He also holds a Master’s Degree in Food Technology (2012) with Distinction from the University of Ibadan, Nigeria. Dr. Oyeyinka completed his PhD. Degree in Food Science and Technology from Durban University of Technology, Durban, South Africa in 2017. All the programmes were completed in good record time. He is a recipient of several awards/scholarships including Travel Grant Award to attend the IVth InternationalGCP21 Cassava Conference in Cotonou, Benin Republic (2018), Travel Grant Award to attend the Food Safety and Security Conference, South Africa (2016), the MASHAV Scholarship to attend International course on Postharvest, Physiology, Pathology and Handling of Fresh Commodities in Israel (2017), Travel Grant Award to attend Food Safety and Security Conference, South Africa (2016), Outstanding PhD Student Prize, Department of Biotechnology and Food Technology, Durban University of Technology, South Africa (2016), Harbin Institute of Technology Student Exchange Scholarship, Harbin, China (2015), Doctoral Scholarship, DUT, Durban, South Africa (2014-2016), Alumni Best Graduating Student Prize for the Faculty of Engineering and Technology, LadokeAkintola University of Technology, Ogbomoso (2008), Best Graduating Student Prize, Faculty of Engineeringand Technology, LadokeAkintola University of Technology, Ogbomoso (2008), Best Student of the Year Department of Food Science & Engineering, LadokeAkintola University of Technology, Ogbomoso (2006-2008).

His research interest focuses on value addition to underutilised and neglected crops through characterisation and modification of their biomolecules such as starch for improved functionality and application in the industry. Specific areas include understanding the relationships between structural and functional properties of starch, enzymatic hydrolysis of starch, development of resistant starch and other dietary fibers for food applications and development of value-added products from pulses and cereal grains.       

 

Before joining the service of University of Ilorin on 14th October, 2011 he had worked at LadokeAkintola University of Technology, Ogbomos as a Graduate Assistant (2010). He has attended several international and local conferences, workshops, seminar and training. Dr Oyeyinka is happily married with children.
